The Chemex is a classic and elegant pour-over coffee brewing method that produces a clean and flavorful cup of coffee. Here's how to brew a perfect cup using a Chemex.

You'll Need:

  • Chemex brewer
  • Chemex paper filter
  • Fresh coffee beans
  • Burr grinder
  • Gooseneck kettle
  • Timer
  • Scale
  • Stirring stick
  • Water
  • Mug

Step 1: Prepare Your Equipment

  • Place the Chemex paper filter in the brewer, ensuring the side with three layers is facing the spout.
  • Rinse the filter with hot water to eliminate any paper taste and preheat the Chemex. Pour the rinse water out of the brewer.

Step 2: Measure and Grind the Coffee

  • For a standard 12-ounce cup, use about 28-32 grams of coffee beans (adjust to taste).
  • Grind the coffee to a medium-coarse consistency, similar to sea salt.

Step 3: Heat the Water

  • Heat water to just off the boil (around 200°F or 93°C).
  • Pre-wet the coffee grounds with a small amount of hot water and let it bloom for 30 seconds.

Step 4: Begin Brewing

  • Start the timer and pour water over the coffee grounds in a circular motion, making sure all the grounds are saturated.
  • After this initial pour, wait for about 30 seconds.

Step 5: Continue Pouring

  • Slowly pour more water over the grounds, using a spiral pattern, and avoid pouring directly onto the paper filter.
  • Continue pouring until you reach the desired coffee amount, maintaining a consistent flow. For our 12-ounce example, this might be about 400-450 grams of water.

Step 6: Stir and Let It Drip

  • Give the coffee a gentle stir to ensure even extraction.
  • Allow the coffee to drip into the Chemex. This process should take around 3-4 minutes.

Step 7: Serve and Enjoy

  • Once the dripping stops, remove the filter.
  • Pour your freshly brewed coffee into your favorite mug.
  • Sip and savor the clean and flavorful taste of your Chemex-brewed coffee.

Now you're ready to enjoy a delicious cup of coffee brewed with the Chemex method. Experiment with the coffee-to-water ratio and grind size to find the perfect taste that suits your preferences.
